Hi there.
You may need to check the calibration of your fryer in to verify if the thermostat regulates the oil temperature as set on its dial. As for the thermostat body, it should be mounted properly to avoid movement that which could break the capillary.
You can download Pitco Fryer Owner's Manual which includes calibration procedure at http://www.pitco.com
Regards.

How long does it take to fry a whole 5 lb chicken and at what temperature do you fry it

Hello, George -

See the instructions here:
https://www.leaf.tv/articles/how-to-deep-fry-a-whole-chicken-in-peanut-oil/

Synopsis: After heating the oil to 350 degrees Fahrenheit (peanut oil is recommended because it doesn't smoke as much as other oils at high temperatures), carefully (slowly) lower the trussed chicken into the hot oil in the deep fryer. Cook the chicken for 7-9 minutes per pound.

Happy eating.

How long do i deep fry bone in chicken, and what temp ?

Bone-in chicken requires slightly more time to cook than boneless cuts. The average time to deep fry wingdings is around four minutes. Whole wings take about 10 minutes, and thighs and legs require 12 minutes. Bring chicken to room temperature before cooking to use these time estimates; along with following times for cooking, watch for the color of the chicken's breading to develop a deep brown color. Fry chicken in a high smoking point oil heated to 350 degrees F and remove pieces as they become golden brown and float. Check internal temperature using a kitchen thermometer to ensure doneness; internal temperature should register at 165 F.

I have had 8 pitco gas self-filtering fryers for 10 years. I'm not sure what the model they are, but hopefully it won't matter. Recently, especially after boiling out, we have had a problem with...

Two things when you clean out the pots.....Number one is, make sure you rinse all the soap or cleaning solution out really well, and I mean WELL... any left over residue will ruin your new oil, and number two, your oil temp should never be above 325, especially with new oil.... Sounds like you are burning your oil up with too high of a temperature. Actually, there is another option here too,
have you ever tried a fryer additive? Like Miroil is one....? You add this liquid prior to lunch or dinner, according to how much oil is in the fryer, how many hours a day the fryer is on and how many days a week you are open....Anyway, if you are interested, we could help you with the formula, and from that point on, you never dump a whole vat of oil again. Each day, you would drain off a pre-measured amount of oil, and lets say you have a chicken fryer, and a fish fryer. You would drain off the chicken fryer and dump into the fish fryer, and put the same exact amount back into the chicken fryer of new oil. It might be a 2 cup measurement or alittle more, but the point is by freshing your fryer each day, you will never dump it all out again. They also recommend oil temp at 325, no higher, and making sure all soap residue is rinsed out completely before adding any oil.
By doing this, your oil will look golden all week long, and you will no longer have the darker oil as the week goes by, with the really dark, crappy stuff right before you end up dumping it...Hence, your products will always look the same too, light golden, absorb alot less grease during cooking, and again, that's all week long, not just first part of the week....If you are interested in trying the additive, I can price you some, or you can go online yourself? Not one person I have ever set up on this additive program has ever complained or stopped using it so far...They love it, and it really works.

If you have new thermostats and a high limit switch, you might have had a bad thermostat before, and your temperature was really alittle lower with the older one? Now, that you have a new one, and it's working correctly, maybe that 350 is too hot? If the other one was bad, and running alittle less hot, say 300 or 325 all along, and you just never knew it, now you have one that's registering your temperature at the correct reading and it's too hot? Or, another scenerio could be your tech installed a bad thermostat? That happens too, where a new thermostat is actually bad to start with, and maybe it's off alittle the other way? LIke 350 is actually 450? If you have other questions, or are interested in the additive, my name is Susan, with Restaurant Equipment Outlet, 888-542-5959 and I would be happy to asist you in any way, and I'd love to know what you end up finding out on your fryers.... Thanks, Susann REO

How long do you cook chicken. Does the green light need to come on before you start frying?

The Onwer's Guide for the Rival CF106-W Deep Fryer is available here:

http://www.rivalproducts.com/manuals/MANUALS/CF106-W_43_76030376.PDF

For deep-fried chicken, preheat oil to 360 degrees F. Bread and then fry for 20 minutes or until golden brown and done.

The surest way is to check the internal temperature of the thickest portion using a tip sensitive digital thermometer. The internal temperature of chicken should reach 165 degrees F.

Our battered chicken and fish is sticking to the basket what do we do?

Hi there:- You mean the products you put into the deep fryer stick to the basket or sunk down to the bottom and stick to the bottom basket. It can be a number of reasons but the most important is the temperature of the oil, it should be 350 degree F or more to do the frying , any temperature below that will be call boiling not frying. Secondly the batter mix ( you should try out and make your own batter mix ) Hope this can help.

Do not know how to use

Oil darkens with use the oil food molecules burn when subjected to high prolonged heat.
When frying foods such as fish or chicken use the oil once.

Do not filter oil over to reuse. Storing the oil in the refrigerator may extend the life of the oil, this should not be done ever. This process of chilling the oil and then burning the oil to room temperature causes excessive splattering furing the heat up.

Storing the covered oil in a cool dark place, for up to three months. ( remember to check oil when you use for color, smell, or excessive foaming. Throw out if there is signs of all the above.

This unit has a warranty for one year from the day of purchase.

Cooking:

When starting let unit reheat 7-10 minutes. This will get the heat to desired temperature. Re4ady light will cycle on/off during frying as temperature fluctuates due to food load.
Types of foods cooking: temperatures and time of cooking

Chicken strips 375 F. 5-8 minutes

Chicken pieces, bone-in 375 F. 15-20 minutes

Fish, battered 340 F. 8-10 minutes

French fries, frozen 375F. 3-5 minutes

F375F. 3-5 minutes

Onion rings 375 F. 3-5 minutes

Shrimp, breaded 375 F. 2-5 minutes
When frying frozen food if iced rub off lose as this can make the temperature of oil cool down. Pre-cooked frozen food cooks faster and does not come out oily.

I cannot wait to start cooking in mine as I got it for a christmas gift. Great recipes in the owners manual:

Apples fritters yum yum, beer batter for fish or chicken, deep fried chicken , chicken Kiev, quick doughnut made from biscuits, add topping of ground cinnamon and suger.

The oil should be hot enough so that when a drop of water is droped into it the oil will sputter, but not not hot enough to cause any smoking vapors!
