I am getting bits of pieces of silver flaky looking stuff in my bread dough. What is this - stuff from the paddle? The machine is making a high squealing noise?

That is probably the nonstick coating coming off the paddle or your breadpan or both. Are there scratches in your pans or paddles surface where you can see the metal under the non-stick coating? If yes, that is probably what you are seeing in your bread. I would tell you to try to get a new pan and paddle if they are scratched, but if your machine is squealing too then you should try to get a new or good used machine as you would end up spending more on the pan and paddle plus repairs to end the squealing, so you should just replace your whole machine. I have some models that are like new if you are interested in buying one. I would have to go through ebay and sell the almost new/new ones for $40.00 including shipping if you are east of the Mississippi. If you shop on ebay you can get one from me or of course others sell them there too.

Zojirushi bread machine dough cycle not working

It sounds like it is working fine Carol. When bread dough it worked and stretched by the paddle it does make a fat blob, / ball of dough. When that is left to prove, it increases in volume and fills the pan for baking.

I am a trade chef, I make bread by hand. I am retired and make bread very 2 weeks. I have used a bread machine in the past and researched many bread machine issues here on Fixya. It is important to load the ingredients in the right order, wet ingredients first and dry ingredients on top. They are really only suitable for yeast breads with high gluten flour. No good for your Christmas Cake!

I don't know about your specific model, but in most bread makers there is a removable paddle that goes in the bottom of the bread pan after you put that in the machine. The paddle usually has a flattened side on the hole which slides on to the post sticking up from the bottom of the machine. If you look at the post straight down from above it should be D shaped. The usual procedure is to put the pan in the machine, install the paddle, and then add your ingredients. Assuming you are doing this and it is still not working, trying running it through a mix only cycle (like for pizza dough) with the machine empty to see if the paddle is engaging and spinning properly. If it is not, contact the manufacturer for assistance.

All bread machines have a final "punch down" of the dough that lasts a few seconds before the final rise stage. When "punch down" is over that is when you can remove the dough ball, remove the paddle, set it aside and place the dough ball back in the pan. It usually helps to have your hands dusted with a little bit of flour.

Your machine has a lubricating grease that is under the small gasket or washer at the bottom of the pan under each paddle. After a lot of use the little gasket can fail and the grease can get get past the gasket and into your bread. The best thing to do is either replace your pan with what is called a "pan assembly which will include everything but the paddles. If you decide to do that be sure to keep your paddles. The other choice of course is to replace your machine which might not be a bad idea if your machine has been used a lot because you would have a new pan assembly but older parts may begin to fail such as the drive belt. Bread machines aren't all that expensive anymore so you may want to go ahead and replace especially since you just use your machine for making dough.

The NEW substitude paddle they send you will work. It does not have the shorter flat piece your paddle has.

The machine bogs down when mixing the dough for bread

You should be using a dough Hook not paddle I have a Kitchenaid stand mixer and it uses a hook for dough paddles offer too much resistance for dough.

Dough paddle is jammed on Welbilt ABM 4000 Bread Machine

Put boiling water into pan and leave until it is cool to the touch and try wiggling the blade free.
