With the 5838 the bread looks good till the bake cycle as than the bread falls about halh an inch

Accurate measured ingredients, fresh and best ingredients (especially yeast and flour), warm liquid (110 degrees), use peanut oil instead of butter (raises well and stays fresh longer), pkg. Rapid Rise yeast is same as bottled bread machine yeast and is always fresher (1 pkg equals 2 1/4 tsp.so use jarred yeast for odd amounts, ie. 5 tsp=2 pkgs + 1/2 tsp from jar). Wheat bread will rise good and drop a little but stays good for slicing. Oster's pan is too large so I cut loaf in half length ways for smaller and easy to slice pieces.

Bread raises to good heights and then falls while baking to half the size. I have made 2 loaves now and it has done it to both. I have new yeast for a "bread maker machine".

Very likely Oven temperature that's too low. This means the dough rises to its maximum, then collapses before it gets hot enough to set.

Try using a little less liquid and/or more flour in your recipe; Might be enough to fix it..
Also try a different program. and/ or Try different recipes

If still happens, return machine as defective.

Paddle sticking in bread when baked bread is removed. Oster Breadmaker 5838

Hi,
This is a common problem. The solution is to take the paddle out of the machine after the last kneading cycle and before final rise/bake. You may want to take the pan out of the machine to remove the paddle to be safe...unless your machine has a pause cycle. Hank

Hi,
There is a sealed bearing at the bottom of the pan. This allows the paddle to rotate. The bearing has failed and is falling apart. This usually happens with age or use. Time for a new bread pan. If you are lucky you can find one on ebay. Sorry for the bad news....Hank

Oster 5838 and a good banana nut bread recipe

CookingCindy 1 Solution July 23, 2009 I have made the following recipe in my West Bend machine with great results. I just got a Sunbeam 5895 at a garage sale - it works great - just wanted a different "shape" loaf! I'm going to use this recipe in my Sunbeam - don't see why it won't work! Here's the recipe! 1/2 cup softened butter, cut into small pieces for good blending 1 cup mashed ripe banana (personal note: if my ripe bananas don't measure up to 1 cup, I add enough milk to make it 1 cup. Seems to be okay) 2 eggs, large, slightly beaten 1/2 cup chopped nuts (optional) 2 cups all purpose flour 3/4 cup sugar 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt Grease inside of pan and knead bar generously with vegetable shortening (I just spray with Pan Spray). All all ingredients in order listed above to pan. Lock pan into bread machine. Program for quick bread. After a few minutes of mixing, I usually take a rubber spatula and scrape down the sides and stir in any flour that has not been completely mixed. I didn't do this once and ended up with a loaf that had flour coated corners! Good Luck! Enjoy! Just follow the above recipe but if your using the Oster 5838 expressbake put the setting at expressbake 80min. It works flawlessly, also with the oster 5838 expressbake you don't need to use the rubber spatula to mix after a minute because it blends everything together nicely. Thanks bobert.
