The plenum is the box the blower assembly attaches to. The blower pulls the cooking vapors down the plenum (well) and discharges through the duct.

Fairly difficult but doable for the mechanically inclined. They are all a little different - look underneath to uninstall the entire unit (turn off power first!). It is probably held in by a few screws. The glass is likely held by screws underneath as well. Hope this helps!

Yes, the entire unit must be lifted out - it is probably secured with screws underneath. Then you can remove the screws on the underside of the glass to access the switch. Hope this helps!
