I have a honeywell digital thermostat for my central air and it has a set, hold, run buttons and I just cant seem to set it right to keep the air running. when you hit set it flashes the time and then hit set again and the temp flashes

Is this a new hvac system? A new furnace can work differently than your old one. Does it shut off after a minute or two or continue to run? If it continues to run then call that professional back and let him fix it. If it shuts down after a minute or two then it is a feature of the new thermostat to squeeze all of the cool it can from the a/c coil and ductwork.Some of them have settings that you can adjust for blower delay on and off, read the manual that came with the t-stat and see if it does.

If your program that you have programed into the stat is set to 73 it will go back to that setting if the stat is in the program mode....... Push the HOLD button on the stat and keep pushing it till it say permanent HOLD right above the buttons on the bottom and then you can set your temp to what you want. press run program.... from there, set the schedule for maximum efficiency. permanent hold only shows up after the hold button has been pressed 2-3 times. If this does not fix the issue, there is a master reset button on the thermostat that will set all settings back to factory default.
Sounds like it may have lost power. Check the breaker and the fuse at the furnace. If they are all in the on position and working then it sounds like you may need a technician. If the display is blank on the thermostat you may also want to replace the batteries.
