Francis!Francis!3X overheating I press middle button to draw a shot and steam sputters out instead of hot water

First I'm not a Francis tech. But I have worked on similar table top machines. You should call your vendor for service as there is no customer serviceable parts in this machine. (To your question, Yes, it can be fixed but you may find it costs more to fix than to replace it with a new machine.)

* There are usually separate boilers for table top units. There is a pump and heater system for each section. (usually 2 for this type of machine. But there may be a third system if you have the Coco option.
* Since each system is separate then your Latte/cappucino system has a problem. I will list the most common but all require a qualified service tech to repair/replace. (lots of small parts crammed into a very small space.)
* Cap/Latte Membrane button not working. If it feels mushy (not like the other buttons) then the button panel needs to be replaced.
* There is a CPU/PC board malfunction. Replace
* There is air in the water line to the Cap/Latte system. Make sure the water tank is filled. Power down. Wait 10 seconds. Power back up. Press the Cap/latte button to start the pump. Watch the steam wand if water flows out. If it does, then wait 30 seconds and try again. should be steaming.
* No steam or at least hot water? Just cold water? Then the steam heater and/or thermo-fuse, thermo-disk, needs to be replaced.
* Got hot water but little to no steam? Then steam unit and/or thermo disk needs to be replaced. (best to replace both as a whole unit; tank, Heater, and Thermo-disk)
* Heats up very hot but sputters water and steam. Clean steam wand and/or tip (if removable) If it leaks steam at the top of the wand near the body of the machine then the whole wand needs to be replaced.
* Still sputtering? The steam system is clogging up. Call for service.
* Final; I'm not a fan of de-scaling as it causes more problems for the machine. I've always found that using filtered water (bottled ok) is best. Water softeners if available is okay. BUT stay away from HARD water and Ultra Pure (100%) water as it leaches out the metal ions from the machine.

You will know the machine wants to be descaled when the red alert triangle is blinking (lower right part of control pad)
1) Machine must be OFF and cool in order to descale the machine!
2) Fill the water container to MAX with very warm faucet water.
3) Add a packet of Illy / Urnex Dezcal or similar citric acid based descaler to the water, stirring it in until dissolved.
4) Replace the water container into your Illy Francis Francis X7.1 Iperespresso machine.
5) Place a 1L (minimum) plastic catch bowl (or other suitable container) under the brew head AND frothing wand, which should be pointed toward the center of the stage under the brew head (as in video above).
6) Power the machine ON.
7) IMMEDIATELY depress and hold only the BREW (coffee cup symbol) until the machine emits THREE SHORT BEEPS, followed by ONE LONG BEEP. Release the BREW button after the long beep.
8) Press the BREW button again, as you would when brewing a cup of espresso.
9) The machine will begin to PULSE, and the STEAM BUTTON will blink. The machine will alternate between pulsing water through the brew head opening and the frothing wand. This will continue until the water container is EMPTY. Be ready to remove the water container, and IMMEDIATELY refill it with cool (Brita filtered or distilled is best) water, and replace it as quickly as possible. The machine WILL NOT STOP THE DESCALING CYCLE, so replace the water container as quickly as you can. You will probably need to empty the catch bowl at least once or twice during this procedure, and the water will be VERY HOT, so use caution!
10) The machine will continue to pulse between the brew head opening and the frothing wand.
11) The machine will stop pulsing at some point during this second tankful, and the BREW button will begin to BLINK, with an alternating BEEP between blinking. If there is very little water left in the water container, fill it up with cool water again. Empty your catch bowl if it is full and you haven't already done so! Once everything is back in place, press the blinking / beeping BREW button, which will begin to rinse the machine through.
12) The machine may repeat Step 11 more than once!
13) The machine should now come out of DESCALING CYCLE on its own, with the red POWER button illuminated, along with the blue BREW button being on and solid.
14) Run one or two BREW cycles, with cool, filtered water.
15) Run the STEAM cycle for a few moments, as you would when frothing for a beverage, to ensure no descaler remains in the frothing wand.

Don't know how your controls are set, but you have two switches on the front and a knob on the right. The switch for the steamer (the right hand switch) should be off. The knob on the right should be turned clockwise to turn in off. Then no water or steam should come out of the steamer wand. If it does, the seal on the knob inside the machine is broken. It can be repaired but only if you're handy with a screwdriver (make sure if you take it apart you disconnect it from the mains).

1) The coffee you are using may not be ground finely enough to provide a proper extraction time, resulting in water rushing through the ground coffee much too quickly. Think of it like water running through a handful of pebbles as opposed to a handful of sand. You want "sandier" coffee.

2) Your gasket (the rubber part that seals the portafilter to the group head) may be worn/damaged and is leaking water when you are brewing. Attempt to contact FF! or Saeco to secure a replacement gasket. When you are not using the machine, don't tighten the portafilter all the way in to the head, either leave it completely disengaged or only loosely attached. This saves wear on the gasket.

3) Your brew water may be too hot. Purge your boiler right before brewing by running water into a bowl without the portafilter locked in. After a few seconds the superheated water will be run out and you're ready to brew.

Something is stuck inside the wand. Get a small pice of wire or small paperclip and inset and try to clear the blockage
