you cannot fix this. Unfortunately for movements to be that exact they cost a lot of money and the movement inside your subaqua is not that high tech and accurate. This is what makes watch really expensive the little things like this. Unless you are buying a 10k watch , they usually are not going to have the top of the line movement . The movement you have in your watch is an ISA 8173 and that is as accurate as the watch will get.
For Invicta chronographs to set the day you need to pull the crown out to position 3 (2nd click after releasing the crown/ furthest crown position/ same position to adjust time). You can only set the day by rotating the crown clockwise. Every 24 hours of clockwise rotation will move the day indicator forward 1 position (Mon>Tue, Tue>Wed, etc). If your watch is set one day ahead of the correct day (Its Tuesday but the watch displays Wednesday for example) you will need to rotate the crown clockwise through the entire remainder of the week in order to get to the correct day, you CANNOT rotate the crown counter-clockwise in order to move the indicator back a day.
To sync the correct 12 hour with your day you need to set the date to the day before (if today is Wed 21, then make sure the day window reads Tues 20). Then spin the analog hands until the the date window turns to Wed 21. At this point your watch is reading 12 AM (midnight). Then keep turning to set the correct time. If it is 9 am then stop the hands the first time you hit the 9 marker. If it is 9pm, then keep turning until the SECOND TIME your hour hand meets the 9 marker. This is now set for 9 pm. The day (Mon thru Sun) sometimes needs to be set seperately from the day; it may take a couple of tries but use the directions above and patience and you will achieve your goal. That's how you do it. Pull out the crown and advance hands forwards. When the hour and minute hand will pass 12 o'clock (midnight), you will notice the day hand will jump to the next (following) day. Advance hands as long as needed to reach the desired day.

apparently there is quite a delay (hours) before the day eventually chages back to English. In other words it doesn't change immediately after 12pm but sometime early in the morning?
The moral of the story is that you should be in bed before 12pm and not to take any notice of the day on your watch since it will still be yesterday and in French?
