How do i vent my gas oven for my deli. i bought it used and do not have proper venting instructions?

Contact your local municipality's Building Inspector for code and fire department requirements for commercial installations. There will be a permitting process and fee involved but at least the installation will be done properly and not void your insurance.

Why is hot air coming out of the top of my oven

If you have a gas range they will vent the heat from the oven out the top by the rear panel. If an electric they will generally vent through one of the rear burners. I am sure that this is normal.

The heat from your vent should be a little lower than what the oven is set at. So I doubt if you have a problem but you might want to take some temperature measurements to see.

check regulators, and valves, on the regulator pay close attention to it's vent, (usualy a small brass bolt with a hole in the top) many times these vents become clogged with grease and other sediment, the easy fix is to buy a new regulator, the right fix is to extract the vent system from the regulator and boil it out.

When the oven gets dirty and you don't run the clean cycle, dirt builds up and burns away the hotter the oven gets. Run the clean cycle if you have a self clean mode on the oven. throw the metal burner and grates in the oven too. (no plastic) open a window because it will stink and it takes a few hours to run. If not, use oven cleaner then run the oven to the hottest temp for at least 1-2 hours to burn the old dirt out..

MY PILOT KEEPS BLOWING OUT BUT THERMOCOUPLE IS BRAND NEW I AM GETTING FRUSTRATED BECAUSE IT GOES OUT AND THEN I LIGHT IT AGAIN AND IT WORKS WHY DOES THIS KEEP HAPPENING.

Hi,

There can be a number of things causing that...
Is the oven vented? If so then is there a good cap on the pipe?? is the vent pipe high enough above the roof line?
Is there a draft diverter at the back of the oven where the pipe hooks on? A direct connection can cause this...
Is there a vent hood in the room that the oven is in??? Is there enough makeup air, or is the vent blower pulling air back down the stack?
Is the main burners "pulling" the pilot flame away from the thermocouple?
Is the "hood" on the pilot flame adjusted properly to keep the flame on the thermocouple?
Is the thermocouple positioned in the flame properly?
Is the thermocouple correctly tighten into the gas valve?


These questions are what I would be looking for if I was troubleshooting that appliance...

if u have unproper vent specs on unit it will blow. read instellation spect for proper vent specs
