HI. This will be an issue that concerns the main power control board. There are multiple damaged components located on this board. You have stated that you observed weak fan rotation, during your inspection of a particular fan motor. This is a strong indication of a failed main power control board. I recommend to replace this damaged main power control board. Once replaced, the unit will operate properly.
Part number for this damaged board will be 8206668
With this particular board any burn, would be obvious, the clicking sounds like the realy on the board, since your getting sputtering of the water during the clicking, and it shuts off when the door is open,
i would check the the acctuator switches, it sounds to me like they are sticky, and causing intermitten contact,
i am including a pictoral link, it will show you how to dismantle the unit like a pro, and if you find any sticky switches, you can order right there too
hopes this helps save you a lilltle bit
ALWAYS UNPLUG THE UNIT WHEN WORKING ON THIS

Thanks for the info on checking the actuator switches. I assume you mean the water dispenser actuator on the front of the unit?
I didn't see the pictoral link for some reason. Could you post it again?
Thanks for the diagram. It looks like I should be removing the front cover assembly to get access to the dispenser parts. However, I don't see how to remove the cover assembly without breaking it (which is how I usually go about it).
Can you explain how to remove the cover?
Thanks!
Figured out how to remove the assembly. Disregard my previous request.
I checked the switches on the dispenser and they seem OK.
As a test, I disconnected all of the leads from the dispenser controller board. When I plugged the fridge back in, the clicking started, but lasted only 30 seconds before stopping completely.
I then connected just one of the leads at the dispenser board. When I plugged the fridge in, the clicking was constant, except when the door was opened. I tried this test with a couple of other individual leads at the dispenser board with the same results.
I then disconnected all dispenser leads again. When I plugged the fridge back in, the clicking stopped after 30 seconds. I decided to leave it for awhile. About a minute later, the clicking started again. I could see the condenser fan trying to start, but the blades just rocked back and forth instead of fully spinning. Like it couldn't totally get going.
Am I back to a probable main control board issue?
Thanks very much for the info.
