While I have not been able to find any listings or a manual for a Minolta AF/2 PROJECTOR, there were many Minolta AF/2 CAMERA choices available when I searched Google - everything from a uTube video to copies of paper manuals. I wondered if this was posted on the PROJECTOR board in error....
Since Minolta quit the camera/flash biz, Ebay is your best bet for a printed copy. To get a free pdf file, Go to KM global website. Select Canada, as yer country. navigate your way to downloads. Also check the Orphan camera website. I have a pdf for one, but I am not allowed to give it to you here. Try the Minolta groups on Yahoo.
Having researched the internet - I've found a Minolta branded flashgun suitable for your camera. It has the bounce flash you ask for, however it's not cheap.
The Alpha 100 only supports pre-flash TTL and ADI flash control which are not supported by the Sunpak. The flash should ignite, but automatic controlling of its brightness is not possible.

Im sure that model of Flash. Does the minolta flash fit the hot shoe of the Canon?
If it does then I would first try seting the flash to manual mode and adjusting that.

Minolta X 370 is not an auto focus camera so provided you are willing to use the Vivitar lens in manual AND provided the lens has minolta mount , you will be able to use it.
