you may just need to delete your current email account in your iPad , then reinstall it. You would need the correct parameters from your Internet Service Provider (e.g. , SMTP or IMAP, port numbers, etc.)
Understand that all the apps and data on the iPad are associated with an Apple ID so "signing out" of your iPad may render some apps and functions useless.
If you are looking to sell your iPad its best to plug it into a computer and restore factory defaults. This will remove all apps and IDs associated with your iPad.
If you are simply looking for security and worry that while signed into your Apple ID there is a chance for fraudulent downloads and purchases it would be my recommendation to set a password/passcode for the iPad that only you know. This will prevent other users form gaining access to your data without your permission.
The iPad is not meant to sign in and sign out at will but if you need to sign out and add another Apple ID then here are the steps to do so.
There are 2 places in which your Apple ID are linked with your iPad. Your iCloud account (photos/documents/ID) and iTunes (music/movies/apps)
You can adjust settings for these individually under Settings > iCloud and Settings > iTunes & App Store
Simply click on the Apple ID email and then choose "Sign Out"
REMEMEBER, some apps and functions may not work without an associated Apple ID registered with the iPad.
This is a very hard question to answer without me actually being there to see how it is configured at the moment. If you go into settings, email, calendars, etc, look to see if your password is configured correctly. iOS email is not hard to troubleshoot, but one must be there to see how it is configured now. Tell me this, is this a password issue? Do you need to change your email password? If you have an external email account that is added to the iPad, the password that you configured on your external account is the password you have to use on your iPad. . Your ipad does not store those emails on your ipad so if you are having a storage problem, that won't fix it. To delete all the emails though, you have to go to the email account itself and delete them from there.
The easiest way to do this is to add the photo first and then text. To email a photo, tap the photos icon, view the photo you want to email and tap the share icon. An option to email should pop up.
Tap the email option and the photo will be inserted into an email. Then you can add any text needed within the same email.
