SOURCE: when draining water out of the sink, it backflows

Actually no they do not have a back flow preventer, make sure the dishwasher drain connection is installed on top of the "P" trap, if it is then you are having drain problems , remove and clean the "P" trap if it not clodded then you need your pipes cleaned out if it is backing up in dishwasher.. Do it sooner than later or may become totally stopped up..

Make sure your flow pressure is 15 to 25 PSI. Flow pressure below 15 PSI will cause the vacuum breaker to leak.

Hobart SR24H Dishwasher. What dishwasher detergent do I use and how much per cycle?

Hobart are commercial machines so require commercial chemicals. Companies like Johnson diverse and ecolab are the usual favourites, but wherever you buy your cleaning equipment from will have a brand they can sell you. Most companies also provide and setup automatic dispensers with their chemicals. Find a supplier and ask them what they can do for you

Can backflow mounted to sink be moved under sink?

Hi Del:
I'm not sure what you mean by "backflow".
How is this related to your dishwasher?
The discharge from the dishwasher has to be connected to the drain from the sink, upstream of the trap that protects the sink.
A hand sprayer is typically integrated with the sink faucet.

Strong gas fumes when burner is on to bring up wash temp just had burner replaced

there are only two reasons that this would happen.
1. The burners are not adjusted correctly for optimal performance and they are running rich. Could be a gas pressure issue causing this or the orifice and fuel air adjustment needs checked.
2. The ventilation is not adequate.
You need to measure the CO level if this is not vented to the outside. If it is then you need to make sure the flu is adequate and there are in temp inversion issues or room air causing backflow etc.

Hobart LX 30 undercounter dishwasher, commercial Does this model require booster?

Most of the Hobart LX series of dishwashers have their own built-in booster heaters. To check for one, remove the lower front panel (2 screws). The booster heater, if present, will be a stainless steel tank on the left side. If it doesn't have a built in booster heater then it was meant to be used with chemical sanitizer instead.

No water pressure in rinse cycle

AM 14's need 20 PSI flow rate of rinse. Is your pressure gauge accurate? Could the rinse nozzles be blocked with scale? If you remove them to clean, make sure they go back in the same positions. Note the upper arm has one each side pointing up, to clean the top of the machine. Check that the upper rinse arm has it's thrust washer under it's hub.
