19 year old Bosch Dishwasher, no warm/hot water going though cycle. Control knob manually advanced past 5 o'clock (wash), since it will stay there and not advance. Is it most likely the thermostat, heater assembly or something else? Please advise.
I find it unusual for water to be cold since it should only be hooked up to a hot water source. Start your dishwasher by running the cold water out of the kitchen faucet first then turn on the dishwasher so it draws in hot water from the start. The same way you take a shower.
The 5 o’clock timer can be changed. First select a different wash program by using the buttons. Now turn the knob until it corresponds to the new cycle.
It is most likely that it is failing due to old age and needs to be replaced.

You will need to replace the timer. Let me explain why;
After the agitation cycle, the machine will enter a drain mode where the basket will not spin, only drain. After some time, the timer should 'pause' causing the machine to engage the spin clutch. The timer contact has become stuck, not allowing the pause, thus never entering engaging the spin clutch.

this can be two issues. One could be the control knob. there could be a malfunction here. secondly, you may have a faulty water valve assembly. the relay or solenoid may need to be replaced. i would start with the control knob.

Bad timer. Try to find a used one if possible, this item is a little expensive.
