I'm not sure what you mean by "multi-colour mode" but this page shows all of the possible playback display modes and describes them. Hopefully this helps you. I use a D7000 which is quite similar and I've never seen a multi-color mode. Nikon D50 SLR Review

The focal distance on Pentax camera's is different then the focal distance on Nikon's so because of that Pentax lens' can't be adapted to work on a Nikon camera. I'd suggest finding a similar lens with a Nikon mount as cross brand mounting is quite difficult.

No, the B&W mode just saves time if you know you want it and is a "feature". You'll have far more control by taking in color (especially if using RAW) and then desaturating. With digital cameras the sensor is the same whether shooting color or using B&W mode...but the B&W mode is just discarding much of the information.
You CAN!!! shoot in b/w with a d40, the only thing is you can't shoot in auto mode it has to be manual , aperture priority, or shutter prioirity. Go into menu - shooting mode - optimize image. you'll find it in there.
