How do I shut down the water flow to the ice maker

There are three ways.
1. Shut water off to the fridge via plumbing valve.
2. Lift arm on ice maker or use on/off switch depending on ice maker model.
3. Unplug ice maker wiring harness. It won't be able to call for water.
It depends on why you want the water off. A make and model of the fridge would help so I can give you a more specific answer.

Ge fridge is not making ice at all

Make sure the wire arm is in the down position. If it is in the up position this signals the icemaker that the bin is full and icemaker shutsn off. Hope this helps.

Makes too much ice and it overflows

You cannot - this is a design issue that really cannot be fixed since the arm that senses the ice level cannot get caught up in the bucket or it would break every time you opened the freezer. Any fridge brand of this type has the same issue.

Ice dispenser is only giving crushed ice

Pull the ice bin out then reinsert it into the slots until it locks in place.
There is a metal arm under the ice bin. It must go inside the yoke in the rear wall of the freezer.

Fridg is making ice (ben is full to capacity) but does not dispence propperly, it is crushing cubes and is frosting up.

The ice cube bin has become dislodged from the locked position.
Pull the bin out and re-insert the bin into the frame locks.
Look underneath the bin when you push it back in. There is a yoke device in the back wall of the freezer and a metal arm on the ice bin. Make sure the metal arm goes inside the yoke.
Make sure the ice bin feels locked in place.
