How do I fix a Canon G-10 video problem? It shoots/shows mostly faded colors or gray/black/white video, but the color does pop in and out. Did I mess up some setting?

There is no way to just shut off the White Balance if that's what you are referring to with "wb"
You can select auto white balance AWB or several other pre-sets for bright sun shade cloudy incandescent light and florescent light and also a custom white balance but not shut it off.
The camera has to know what color of light it's working with to balance to an 18% gray.
If you could shut it off what you would most probably end up with is a negative looking image totally gray and flat. Just for an example that would be like taking the color out of color film shooting it and processing it, you would end up with the emulsion which is pretty well useless.
