I'm afraid you can't view the image on the rear screen before you take the shot. On cameras like these,( semi and professional DSLR's) this is the norm. You view and compose the shot through the viewfinder and then you can check the result and view all your shots on the lcd screen afterwards
The XTi and prior EOS models have not capability to see the live image to be shoot on the screen. Only the image after taken can see on the screen. Other images also using the view mode.
If you can't review the images, eve if the display is turned off, just after they are taken, maybe the "Review time" is set to "off". Go to settings, 3th tab, Review time and set the desired setting.
there should be a button on the camera that says "disp" this stands for display and when you hit that button you should see the image and if you hit it again it will go black again so you can control whether you want see it or not
There is software you can try, and I'm sure there are online businesses where you can send the card for help. Try doing a google search for 'image recovery' I found cardrecovery.com that has a free trial for their software.

The EOS Digital Rebel, EOS Digital Rebel XT and EOS Digital Rebel XTi do not support stamping the date and time on the image.
It is not possible to record the date and time as part of the image at
the time the picture is taken. However, the date and time is captured
in the EXIF information of the image at the point of capture. It is
possible to print the image with the date and time via printing
software. Please see the documentation for the software package that
you use for printing images for the proper procedure.
This is a Digital SLR
With SLR cameras you can only use the viewfinder
because the image comesi nto the lens and up to the viewfinder via a mirror.
When to take a pic the mirror flips up[usually with a crash] and the image goes to the CCD-
afterwards you will get an image briefly in the LCD.
