Don't be confused by the video. The guy is capo'd up a whole key, so his fingered G actually is the A shown on the chorded lyric sheet.

Are you, by any chance, pushing the strings a little too hard? You may be unaware of it, but some people who are used to playing power or bar chords, tend to push too hard in first position. On an electric guitar, this can cause the unwanted sharping. Plus, if you're more attuned to playing acoustic guitar, this can sometimes happen as well. I don't know if this is the problem, since I've never seen you play, but you might want to check it out.

These amps have a few issues. I would take to a tech, and go over many of the poorly soldered connections on the circuit board.

There is no general answer to your question. An F chord usually has F,C, and A in it... If the music calls for that then either you use that or you are improvising, while somebody else in an accompaning instrument plays the chord.
