The easiest way is to wait for a few hours and try to update your iPhone again. Best remember to try this way because sometimes it really works well. And simply, I would like to introduce the steps to upgrade your iPhone via WiFi environment first and foremost.
1. Open Settings of your iPhone.
2. Connect WiFi and find General on your iPhone.
3. Open Software Update.
4. The device would automatically check for update, or you could click the "Check for update" button.
5. After that, click Install Now button. Then you just need to wait until the update completes.
The iPhone 3G did not initially come out with video recording capabilities, but the functionality was added through a software update. If you connect the phone to iTunes, and click on Check for Update, you can update it to the latest firmware, and then you will gain recording functionality. To use it, open the camera app and press the switch in the bottom right of the screen to switch to video recording.

If its only user installed applications, just delete one free one (such as facebook, pandora, etc...) and redownload it. That updates the rest of the apps on the iphone and should put them all back in working condition.
(If that fixes only the free application that deleted and redownloaded, do the same for the rest of the applications).
Otherwise if all else fails, restore the iphone through itunes and resync the app's to it.
Im amazed that you got the phone working again though. I spilled a can of pop on mine for like 2 seconds, and it was toast so congrats :p.
