This unit should not require a regulator unless your gas pressure is more than 14" water column or 1/2 psi. In most applications this unit will not require an additional regulator as it uses a combination gas valve/regulator.
Make sure the regulator assembly on the gas valve is for propane. Sounds like the gas pressure is too low and the flames aren't going into the burner tubes. Make sure they didn't install an appliance regulator on the back of the fryer. This is not needed as the fryer has a regulator on the gas valve. You can unscrew the cap on the regulator assembly and turn the plastic screw inside all the way in. DO not turn with alot of force. Easy does it.

I would guess about 120-150F for the oil. There is a screw under a cap on the gas valve that you can use to regulate the pilot, but this is not recommended. The flame must be high enough to heat the thermopile sufficiently so that the pilot will stay on and the main valve actuate. For better or worse, most gas fryers are designed to keep solid shortning in a liquid state when off and to safely melt it overnight. If you need the oiler cooler, say for filtering, I suggest just turning off the pilot.
Imperial Model: IFS-40.
The thermostat is either very far out of calibration or has failed, either case it should be relplaced. The Imperial Part # for the thermostat is 1175.
You need to change the regulator, gas valve and burner orfices and possibly the pilot. If you have a commercial fryer go to 3wire.com and you will find the part's you need.Any questions?
Goto 3wire.com,type your model in.Before you try to fire it up i strongly suggest you check the gas pressure on the gas line or you will blow the valve again.
IT IS A GAS PRESSURE PROBLEM CHECK TO SEE IF THERE IS A GAS REGULATOR IN LINE WITH THE GAS PIPE TO THE FRYER IF SO ADJUST REGULATOR TAKE TOP ALUMINUM SCREW OF YOU WILL SEE WHITE PLASTIC SCREW TURN WHITE SCREWW TO THE RIGHT ALL THE WAY IF SAME PROBLEM OR NO REGULATOR RESTICTION IN GAS LINE
