If the pilot light goes off too, then the thermocouple is defective. Otherwise its the thermostat or heat overload protector trips due to excessive temperatures.

Either thermostat is faulty or combination gas valve is not shutting off. more than likely it will be a problem with the gas valve which is the big aluminium block located toward the floor of the fryer. the " actuator " on the valve is faulty. replace the valve Cheers
Check and tighten all wiring connections. check if your thermopile receives enough heat from the pilot flame. Once the pilot is lit, the hi limit device will be the only one capable of shutting it down during operation (once the oil temperature reaches 450F) provided the gas supply is sufficient.
Check if your pilot flame sufficiently heats thermopile during operation and make sure also that it is free of soot or any form of dirt, thermopile generates small amount of electricity to energize pilot and main valve of the gas valve for pilot and main burner operation. This electricity passes through hi limit mechanical contacts. Hi limit on fryers act as safety device which will shut down pilot and burner flame when oil temperature reaches 450F. If your fryer is set at 350F and over shoots up to 450F (which will trip hi limit and shut down pilot and burner flame), the thermostat is not good, but, if hi limit trips on temperature much lower than 450F, hi limit is bad.

Your problem could be or probably is with the regulator...not enough gas
pressure...
Replace the thermostat. If it's really getting to 550F without shutting off the pilot and main burner, or the electric in an electric fryer, by tripping the high limit, replace the high limit as well. The high limit should shut off all the gas or electric at about 425F.
It shuts down because it is tripping the high limit. Apply a soap solution to the lines going from the gas valve to the thermostat. If bubbles appear there is a leak and needs to be corrected. If no bubbles appear then the thermostat is probably your problem.
It is either the gas valve or the piece that the pilot light heats up. After the pilot light gets so hot it heats the copper tube looking thing up and then that goes to a little box that kicks a little switch and lets the power through to the gas valve which then opens and ignites the burner. You can check for continuity on the 2 poles on the switch when it gets hot.
