The solution will probably be under the back cover. Are the switch contacts touching at speed 1? Are all the wires secure on the black control plate? Has anyone been fiddling about with the speed control adjustments? Possibly the small 4 wire PCB above the black control plate is unwell although normally it would give completely dead or every speed high speed.
If it does not start at all until you get to speed 10 then look for a broken wire an any of the wires NOT associated with the phase board. Highly unlikely since you have just been there. Next look at the operation of the switch low down inside the black speed control board. There is a primitive switch there operated by a shaft from your speed control lever. You may find the switch is not activating until it gets right up to speed 10. Have you checked the carbon brushes? The phase board you have just done is normally the culprit for your problem.
Hey Greg, the first thing that comes to mind is that the machine is not tuned correctly. If it runs in slow speed and stops when you move to a fster speed then the speed control switch needs to be adjusted, here is a site that will give you the basics on tuning.
My daughter had this problem with her mixer. The problem is that the screw that holds the speed lever has come loose. To get at the screw you have to dismantle the head. It took me about 1/2 hour to take it apart and put it back together. It is not that hard, except that you have to drive a pin out of the beater shaft. Works great now.
When you said "the speed switch doesn't want to stay in the off position", you meant to
say "the speed switch in the OFF position does not turn OFF the mixer", or "the speed
switch physically cannot be moved to the OFF position"?
In any case, try to adjust the mixer speeds. Obtain a copy of the K45SS Repair Part List from Kitchenaid.com. Remove the screw holding the End Cover and locate the three screws from the Control Plate. All three (2 top left and right, and 1 bottom) must be adjusted.
1. Loosen the lock nuts enough & Turn the 2 top screws clockwise until they cannot be turned anymore. Leave the bottom screw alone for now. 2. Use a dab of white paint or paper whiteout to mark the positions of the Phillips screws. 3. Plug in your mixer and Set the speed selector to "Stir". 4. Turn each top screw One full turn couterclockwise (alternating between Left and Right) Keep making one full turn at the time (for both left and right) until the motor starts running. 5. Put your hand near the Agitator shaft and allow it to brush your finger slightly. Use your watch or clock and start counting the number of times the shaft touches your finger in 60 seconds. The correct count should be 60 RPM (Rounds Per Minute). If it is less or more than 60, give each screw 1/4 turn counterclockwise or clockwise and start counting again. Now tighten both lock nuts. 6. Set the speed selector to "6" and turn the bottom screw either clockwise or counterclockwise to achieve a speed of 180 RPM.

I understand that you are having a problem with you 5 quart commercial mixer by hobart. The 1 and 2 are the same speed and you are not getting 3. You also would like to know what oil to use in your machine and how to fill the unit.
To answer you speed question first. The speed is adjusted by the bolt located in the middle of the planetary (the part that turns underneath of the head the attachments hook to). If this bolt is tightened all the way up or to lose it will not allow you to achieve all of the speeds. You will have to adjust this screw many times and turn the machine on to check you speeds. Eventually you will achieve all three speeds.
Before I answer how you lube the machine you need to know what kind of lube to use. The gear box uses a 90 weight gear oil and the planetary uses 140 weight gear oil (grease).
Lubing the gear box with top cover:
1. Remove the top of the gear box (the cover)
2. There is a Round plate with three bolts (do not remove) in this plate there is a disc (looks like a cap seal) use a small screw driver to pry this disc out carefully you will have to put it back once you are done lubing the unit.
Lubing with out a top cover:
1. Remove the switch and gear selector (remember position of gear selector)
2. Fill thru whole in side behind plate removed
Lubing planitary:
1. Remove drip ring
2. Remove the planetary (unscrew bolt in middle)
3. Remove key located in the side of shaft
4. Lube and put back together
whoever wired the mixer in , hopefully 3-phase made a mistake on the incoming pwr to term block or the contactor switch any 2 leads this should reverse rotation of the mixer
