It is not designed to be left in the meat, while in the oven. It's an insta-read type of thermometer for occasionally checking the internal temperature, in the thickest portion of the meat, while cooking. Be careful not to insert it in such a way, that it touches a bone, It will give a false reading, if it does.

Here's the general rule of thumb for cooking temperatures for meats. Remember though, you cannot leave the thermometer inserted in the meats while cooking. It's only for Instant Read.Always insert it in the thickest part of the meat away from any bobes.
It needs calibrated. LLL (low) means you need to put the probe in a glass of ice water. It will then say HHH (high) means you need to put the probe in boiling water, don't let the probe touch the sides of the metal pot of boiling water.
