Consult your user manual for proper defrost times and settings.

If you don't know how to program defrost or if the unit does not have variable power settings, you can put a cup of water in next to the package you want to defrost and run the microwave for 30 seconds at a time. I don't advise defrosting meat in a microwave but I guess sometimes you have to.

If you were to log on to the manufacturer's web site, I think you will be pleasantly surprised as usually one is able to download, by model number, Customer Instruction Manuals, list of Dealers for spare part supplies as required.

It is the fan. Im guessing it only happens on combination cook and not when you are only using the microwave setting. It happens because the oven is hot and it helps to cool it quicker. It is normal. The microwaves are not working and neither is the oven-just the fan.

I'm not sure at this point whether you're talking about some brand that's called Prestige or a Panasonic brand line which is called Prestige.
