SOURCE: Leather watch bands are broken
The "gizmo" would be the pin that attaches the watch to the case. You can easily purchase a replacement pin or strap at any store that has watches (even Wal-Mart). These are very inexpensive and each one will cost you less than $10.
SOURCE: Where can I get a stainless steel replacement
You are right in that a stainless steel alternative is not typically thought of for this style of watch. The trick here will be finding someone who will customize head pieces that will fit the watch. There are a lot of talented craftsmen out there that can do this depending on where you are. I would start with the repair center for Precision Time. You can go to there website at PrecisionTimeCo.Com. Other than that I would call around to the local repair shops. You can also contact watch retailers to see if they have someone they recommend.
SOURCE: I have a Kenneth Cole
Call this certified Kenneth Cole watch repair company and speak to the representative. Not sure if they are on the West Coast.
