Non newtonian fluids behave differently to say, water, when they flow. In the case of a Newtonian fluid, the more stress placed on it (pressure) the more strain you see (flow rate), in a linear relationship.
Non-Newtonian fluids are far more common, and the thickness (viscosity) of these increases, or decreases, with increasing stress.
A good example is quality wall paint. It flows on with the brush easily because its viscosity decreases with increasing stress (pressure), but shows little tendency to drip and run (increased viscosity) when on the wall, as stress has decreased to almost nothing.
