I had a similar issue in my 2001 grand am. Turned out the power steering pump pulley was not properly seated on the shaft, causing the pulley to be slightly out of line of the other pulleys. It was hard for me to see it, that's how miniscule it was. Bottom line is I would do a thorough check of all the pulleys in the serpentine line first for any visible damage. If all seems ok on that front, I'd take the vehicle to a repair shop to make sure all of the pulleys are in alignment. If one, for example the power steering pump pulley is out of line, not only will it continue to tear up belts, but could potentially damage the power steering pump as well. Hope this helps!

SOURCE: Changing serpentine belt on 98 bonneville

I am assuming that your A/C compressor is junk, you do not have or do not want to spend the money to fix it and this is why you want to run a different belt. The best way to get around the A/C compressor is to remove the compressor and install a "bypass pully". A company named DORMAN makes one specifically for what you are wanting to do. They are available ay many aftermarket parts suppliers.

I cannot give you the part number because I do not know which engine your Bonneville is equipped with. Here is a link to the DORMAN bypass pully catalog. https://www.dormanproducts.com/documents4rb/2600025ACBypassPulleys.pdf

SOURCE: why does my serpentine belt keep breaking?

It sounds to me like one of the belt-driven accessories is stopping. Remove the belt and turn all of the accessory pulleys by hand, both slowly and quickly, in both directions. Any that does not turn smoothly, quietly and easily is suspect and that accessory should either be replaced entirely or have its bearings replaced (if practical). In my experience, the most common accessory to cause this problem is the power steering pump, but it could be any of them.

Serpentine belt keeps breaking

whichever pulley it is sliding off of is not straight. check the alignment of ALL the pulleys and make sure there is no play in them. They should all be solid with no wobble. My guess would be a bearing is bad allowing play in the pulley which lets the belt "walk" to the edge.

Altenator belt breaking

Is this a single serpentine belt system or a V belt with 2 or more belts running the accessories? There is an alignment issue, another bad accessorie or bad bearing (quite possibley the new alt) or as mentioned a bad idler ( if a serpentine belt setup)
