Look for doors not properly closing, poor air flow over coil or something blocking air flow, improper freon level.

SOURCE: My pizza prep-table freezes everything.

Hi

Sounds like you are correct, unless the door seals are not in good order, air leaking in can fool the thermostat.

If it has a top section that the pans for pizza ingredients sit in check that the airways are clear and that the tins and lids fit properly.

Regards

Gordon

Metalfrio prep table freezing evapoator

Check that all vent areas are clear of any dust or food packaging. If you have ice build up it needs to be thawed out also because it will only continue freezing until it gets proper airflow.

Freezing

Keep the prep top table pans covered when not in use. Never leave empty holes where pans should be. If the pans are empty put a couple of inches of water in them to keep some heat load there. Check the door gaskets and door seal on the base doors. Make sure the thermostat is set on number 5. If all of this checks out probably need a new thermostat, but if it's erratic I suspect you will find it's one of the former problems.

TRUE Salad Unit freezing food/compressor will not cycle properly

Double check to see that you do have in fact, the correct thermostat. I have found a chart that shows that the differential is all over the board. There is a way to adjust these thermostats but is very time consuming and if you are not a refrigeration tech, you may struggle with the procedure.

My Cold Teck prep table 3 door ether freezes or cooks the product You set it on 1 and it goes to 65 yiu set it on 4-5 it freezes the products

This sounds like the cold control is sticking and acting erratically. It should be set to around 2 or 3 on the dial. If it doesn't hold a steady temperature (between 35 and 40°) there, replace the control.
