Run into such problem, you need firstly make sure two things:

  1. Have you ever backed up your iPod 5?
  2. Is your iPod 5 still recognized when connecting to PC/Mac?
A. If you have a backup of your iPod 5 from iTunes or iCloud, you can directly restore your pictures.

Where do you save these deleted photos in advance, on the phone memory card or only one the phone internal memory?
If you do have saved them all on the phone memory card, it is really easy for you to get everything lost back. Simply plunge this phone to computer and download memory card data recovery software to scan this phone card and restore all scanned card files back.
But, if you do have saved them all on the phone internal memory, ok, without data backups, your deleted phone photos must be wiped already.
Note: In the future, always save important phone stuffs on inner memory card and also prepare card data backups on different storage devices.

I have listed the detailed steps to delete the Photos from the iPod Touch Device.

1) This is the first step and will definantly be the easiest.

2) Take your link cable, and plug it into the notch into the computer. Take the end of your cable and plug it up into the iPod. The side that has the gray circle on the cable will be plugged up face up.

3) Go into either internet explorer or safari and then go into your files. Go into the file that your store all of your pictures in on your iPod. Then delete the pictures you don't want on your iPod. Or move the pictures to a different folder.

4) Go into iTunes and sync your folder with all of your pictures. It will remove the photos you deleted from your iPod.
Performing the above steps should delete all the Photos in the iPod Touch Device.
