Since you were not specific as to exactly what is shutting down, such as the gas or the fan or the conveyor, or the entire oven, I would look for some sort of safety device. An over temp device or something similar. I would also look for a wiring diagram that may be located on the inside of a panel on the unit.

On the back of the motors there are safty overload reset's, these are small red push in buttons. Also there are fuses for each motor inside the control panels assembly.
had the same problem, safety gas valve is sticking get a small hammer and tap saftey valve. Just bought a new saftey valve about 3 weeks ago pilot light lite but now flame. I have a blodgett oven made in the 60s. Blodgett is getting away from there swithes that they have been replacing them with a replaceable thermocouple.made by robert shaw.
