Scotsman Ice Maker CME 256 I press reset and freez mode it start normally, about 15 mins drop ice and then the Bin full light come on then machine cut off it will not start again byself.

If this just started happening, then this might be an issue. Please double check that you've cleaned any portion of your machine as recommended by the manufacturer prior to using the ice maker again.
Also, you can switch your ice machine to a different power outlet and watch if the issue persists.
First check to make sure condenser fan is running during freeze cycle. Now check to make sure condenser coil is clean. Her is all the specks on the machine.

Check bin full sensors make sure that the wires are making good contact on the board and make sure they are working run your hand between them you should see the bin full light come on the board if not replace the bin full sensors. If the light comes on then replace the board.
There are a couple of things to check. The machine must be level. You can remove the front cover and the plastic sheet that covers the plate where the ice is made. Check to see that the water is flowing from the manifold at the top of the plate. You may have to pop the hose off the end of that manifold to clean the water holes out. It must flow evenly over the plate. Probably the most common problem is the radiator coil there the fan draws air through is clogged up so that it can't dissapate heat properly. You should be able to feel a lot of hot air moving through the coils. The fan cycles on and off periodically to maintain a certain pressure in the freon. That is normal. Clean the fan coils and level the machine.
The water float rod in front of the unit serves as the fill stop as well as the harvest initiate. Difficult to remove to clean really well but not impossible. Harvest time is handled by the controller. First two or three harvests are long as the controller times out the harvests based on the blinking light of the bin full indication. After that is should get shorter.
