Please give me step by step instructions to copy JPG photos, that have been downloaded to a computer, back to a digital card in the Canon PowerShot S51S. If I need to install a drive or converter, please show me photos/pictures of these items and tell me in a Step 1, 2, 3 format how to complete this task.

You want to go to the SETUP menu and select the PRINT menu. Then select the PRINT SETTINGS. Then choose the SET button. You can now use the arrow buttons to scroll up and down until you see the DATE option. This is where you can set this option to ON (which will add the date to the photos you want to print).
You can see the exact instructions on page 137 of the User's Manual here from the Canon website. http://gdlp01.c-wss.com/gds/0900009893/PowerShotS5IS_CUGad_EN.pdf

Consider NOT connecting your camera to your computer.
The best way to download pictures from your camera to your computer involves removing the memory card from the camera and plugging it into a card reader (either built-in to the computer or connected via USB or FireWire). This is likely to be faster than connecting the camera to the computer, and won't run down your camera's batteries.
Once the card is plugged in, it will appear to your computer as a removable drive. You can use the operating system's drag&drop facility to copy pictures from the card to the computer's hard drive, the same way you copy any other files. Or you can use any photo cataloging program such as Picasa.
Using the camera as a source, instead of a card reader (but we really, really suggest using a card reader)
