There are 4 bolts that go all the way through the motor and thread into the wet end.
The first place to start it to remove the face plate of the wet end exposing the impeller.
The impeller is threaded onto the shaft of the motor.
Take a big flat head screw driver and put it onto the end of the shaft of the motor and hold it tightly so you can unthread the impeller off the shaft of the motor.
Unthread those four bolts that go all the way through the motor.
You are done at this point.

There is no way to know the flow rate of your installation beyond a guess ... I guess you are pumping about 95 GPM with a 2.5 hp motor ... a 2 HP moves about 75 to 80 GPM. A 1.5 moves about 60 to 80. There are lots of variables least of which are accessories in the line ... chlorinator ... heater ... filter and its cleanliness ... etc. Other vairables include pipe size ... distances water pumped, number of turns - fittings - restrictions, etc. To get a good idea of the flow rate (important to know when calculating 'turn over' rates) get and properly install a flow rate meter.

Yes, and I recommend and install them. Look at the voltage and Amperage information on both as well. It is typical to see 220V @ 12.9 amps. If you find this on both motors, they are the same size anyways.
It would take a while to explain, but motor manufacturers can rate a motor @ 1.5HP or 2HP and it can be the same motor. They use a rating called a "service factor" to screw around with the actual HP of a motor. But even if the 1.5 is a 1.5, it would be sufficient.
