I would like to convert a VHS tape to DVD. I have (1) the Sony Handycam Digital 8 DCR TRV310, (2) Panasonic VCR, and (3) Macbook Pro with iMovie. I don't know much about the digital camera's ability to connect to both of the other "peripherals" and/or complete a one-pass through. Nor am I sure if I need a S-cable. Could you help? Thanks.

I think you are expecting camera to covert VCR analog video-audio signal into digital so it can be record in Macbook?

Camcorder will not do this job and you need to hookup VCR with DVD Recorder to burn DVD of VHS tape.

Set the AV cable (RCA, yellow, white, red) in the VHS player output. The other end connect to the RCA input of the Sony TRV 310. Turn the 310 TRV player mode.
Put play on the VHS and the picture may be seen in the TRV display.
Record to digital 8. Then play the tape and connect the TRV to the PC or Mac via DV.
This Sony model does not direct, but in two steps can be accomplished without loss.

How to connect a macbook pro and a handycam DCR-DVD105.

If your cam has a firewire connection, you could plug it into the macbook and use iMovie to transfer the videos over. You can also get an external DVD drive to put those tiny DVDs into to transfer it over.

Imovie imports Hi8 tape but not plain 8 tapes

What it is, is the standard 8mm tapes are not digital, and therefore won't import into imovie, unless you have the 8mm to Hi8 option enabled in playback mode, by setting it in the menu, under playback settings.
