Range Two appliance problems. My brand new Kenmore convection oven doesn't seem to heat properly. It took five and a half hours to cook a roast. Should have been done in three hours max. I thought convection was supposed to be quicker. My other problem is my Danby all fridge. When it defrosts it floods the bottom of the fridge. Fridge is level and drain hose doesn't have any blockage. Please help!

On your oven, look in your manual and you can calibrate the oven +/- 35 degrees.If it is out of the range of calibration then replace your oven sensor or themostat which ever one you have.On your fridge I would recheck your drain hose from both ends and puor boiling hot water down drain.The only 2 reasons why you would have water on bottom of fridge is 1 a water leak or cloged drain.good luck

Most likely the Kenmore is actually made by Sharp. Most of the combination microwave/convection ovens are. I have one with a "Wolf" name on it, and it roasts/bakes very well.

Convection cooking

Convection ovens are great for roasting!
I cooked a 15 lb  stuffed turkey in 2 hours in mine. And it was juicy and fab!
My auto degree set for convection  is 325.
I have a Jenn Air wall oven, so I don't know, it might be different for different brand.
Roast or bird should be in the middle of the oven. THe air has to circulate well to get best results.
I believe rule of thumb is a convection oven takes 1/2 LESS time than conventional.

This is an electric convection oven

I am by no means an expert, but I believe the only thing differenty in a convection oven vs a regular oven is that there is a fan to conduct the heat quicker and more evenly. It has to do with heat tranfer rate. I can't imagine why aluminum foil would cause any problem.
