read the user manual as the temp should be thermostat controlled were with gas there is always a pilot light burning when the oven is in use and when the set temp is reached the gas burner is shut off and when the temp fall below set point , the gas is turned on again and the pilot light starts the burner
by using the timer , when the time is reached the gas is turned off and of course you will have to relight it
if you do not have a user manual , download one from google or talk with a gas repair shop
This is normal for the oven. The heating element comes on until the required temp is reached, then switches off until the temp goes down a bit - then it comes on again to maintain temp. Hope you're still enjoying your oven...
MOST OVENS ARE ADJUSTABLE TURN ON BAKE, ADJUST TEMP ALL THE WAY UP AS HOT AS IT GOES, HOLD BAKE BUTTON DOWN UNTIL IT BEEPS AND REGISTERS 0. THEN ADJUST TEMP UP IN 5 DEG INCREMENTS.GOOD LUCK!

The temp indicator light goes on and off according to the temp selected.
The sensor referred to is part and parcel of the the thermostat, or temp selector
the fact the light goes on and off, shows that the thermostatt is working, but neccesserily at the correct temp.I maintain that the thermostat that controls the temp is faulty, and needs to be replaced.

Go to this web site. It has a manual on Viking ovens.
Usually, when the set temp is reached, the flame will cycle down to what is called "Minimum Blaze". This is to put heat into the unit at the rate that it leaves the unit. It helps to hold temp rather than cycle off and on. It cycles high when temp goes below set and then cycles down when set temp is reached.
