Need actual part

I have tried to locate the part online as well as calling parts suppliers. This model does not have a "temperature switch". Does it go by another name?

I have tried to find a user's manual for a Rosieres F200T oven for you. I suspect the user's manual states what temperature each of the numbers for the degree knob represent.

So far, I have not found a manual online for you. I did find an online forum in French, with mention of a manual for the oven model, but the messages date from 2008:

You may wish to locate a business in your area which performs repairs for Rosieres ovens and ask if they can find a manual you can purchase for your model oven. Or, perhaps one of the repair technicians can tell you what temperature each number represents.
