It will initially bog down when engaging, but should pick back up shortly after. If it is staying bogged down, turn mower off and check inside (under) the deck to make sure its not clogged up with grass clippings or dirt. if it is, clean it with either a hose or a scraper. Also make sure the deck is raised when you engage (dont engage with deck lowered on long grass).
The engine is timed internally and externally. Sometimes when it backfires the external timing key where the flywheel and crankshaft join will be damaged enought to put the engine out of time. The engine may run but when put under a load such as cutting grass it will fail. This is about a 30 minute repair and about $2.00 in parts.
You need to check two things. First, what size (horsepower) engine does it have? and second, how sharp is the blade? If you mowing that hard continuously, you'll need a very sharp mower with a good amount of horsepower or you'll just kill the poor thing. I would recommend you have at least 6 HP if that grass is giving you that much trouble. Be sure your blade is sharp (sounds like it's not) or it will just bash the grass down instead of cutting it off. Have your blade professionally sharpened, or better yet, buy a new one. The reason the blade slows down when the grass gets thick is simply because the mechanism operating the blade is weak and cannot move fast when on thick grass.
I suggest you troubleshoot the mower. After that, the blade should work fine when the grass gets thick.
Also, some mowers normally gets slow when grass gets thick, so after troubleshooting, if the mower does the same, then you already know it has to be slow when trying to cut thick grasses.
You mention many PM issues but do not mention a blade sharpening. I don't get on my ZTR without a freshly honed blade installed. "That's" what cuts bahia grass...the blade. You can put all the horsepower you want behind the lade but if you're trying to cut grass with a 2X4 it rips more than cuts grass.
