We have an Epson Stylus 380, work on XP Pro, and just got in Epson brand cartriges. one day, the printer said low ink, or lack of ink and wouldn't print. I didn't believe they would all go out at once and when I put in the New Epson Cartriges, it stated that none were recognized. The Printer isn't two years old yet, and I can't get it to print. We do photos, CD lables, and text printing.
It is not uncommon for an Epson printer to fail to recognise Epson cartridges. It is either due to failing to go through the proper cartridge replacement cycle properly, or more seriously, due to a communication problem between the cartridge and the main board. To fix the first, simply go through the cartridge replacement cycle again (see your manual how to do this before the cartridges are empty). Simply take your new cartridges out when told to, and put them back in again when told to insert the "new" cartridges. If it's the second problem you need specialist help, or simply sell your printer on e-bay for what you can get.
