The answer would be a yes, as long as the model of your playstation 3 has what's called a DIGITAL OUT (OPTICAL) CONNECTOR. As far as I know all of the PS3 has this type of connector at the back of the unit near the LAN port and AV port.
The next thing you need to check though is if you surround sound system has a DIGITAL OUT (OPTICAL) CONNECTOR. If it does, then you're all set. All you need to do is buy the necessary cable to connect the PS3 to your home theater/surround sound system.

you need to have a stereo receiver with hmdi inputs and outputs.
yamaha has some really noce inexpensive 6.1 ones you could probably grab on craigslist for cheap
