Check the gas pressure regulator behind oven. Vent must be kept clean. Try screwing off silver dust cap.

SOURCE: oven probs

I think you are having a problem with a high limit switch that has become faulty. If you are running this around 400 degrees F. These things fail over time and since you said its a blodgett deck oven I assume it has to be over 10 years old. If you need further help please comment me back.

Hope this helps ya

After what shut off? Main on/off valve? Thermostat? If thermostat off and still have flame, thermostat is defective.

Pizza scorching on bottom

This may sound simple but....Do you know for sure the oven temp is 550 (use a thermometer on the stone to be sure) The thermostat may be set at 550 but could be running hotter? I have had this problem in the past with ovens.

Have Blodgett Pizza oven canno read model or serial but have replaced gas valve and T-stat and still shuts down

Since you were not specific as to exactly what is shutting down, such as the gas or the fan or the conveyor, or the entire oven, I would look for some sort of safety device. An over temp device or something similar. I would also look for a wiring diagram that may be located on the inside of a panel on the unit.

Hope this helps some how.

Pilot, controler and gas knob needed replacement

If you have the older Bakers pride manufactured more then 20 years ago and it has never had service, it sounds like the safety valve is defective, that's the red button you push in the light pilot, if the pilot is lit and when you turn the manual gas valve on for the main burner to lite and still it does not you problem still may be the safety and/or a failing thermocouple.
