Our oven doesn't maintain temperature. What might be the problem?
The problem you describe is usually caused the the relay control board. This controls the power to the bake, broil and convection elements. At www.FixYourBoard.com, we commonly get this complaint. Make sure you're oven is vented properly. I had this problem - the oven turned on and reached the proper temperature then didn't maintain it. No one could figure it out until I had them pull out the oven and we realized the cabinet installers had somehow reversed the botton drawer box so there was no venting and the oven is autotmatically set to turn off for safety reasons when it reaches a certain temperature for x-amount of minutes (I can't remember what that is). A quick solution was to open the bottom drawer for venting until the cabinet could be fixed.
When an oven doesn't maintain the set temperature, first make sure no one is allowing the heat to escape by opening its door. If not, the oven control either needs to be re-calibrated or replaced. To have the control replaced, call an appliance service person.

this is what you most likely need. Age, or the clean cycle, can cause them to start to malfunction.

It is inside the oven, and comes out/goes in pretty easily, but you have to be careful when removing the old one, not to loose the wires in the hole, because then you have to pull the unit out from the wall and remove the back in order to plug the new one in.

Technician just left our house with same issue. Jenn-Air had issued a technical bulletin as the temperature probe is mounted directly to the heating element, and measures the heat of the element, not the oven. Their fix is a revised temperature probe that goes at a 90 degree angle away from the heating element.
If your temperature is consistent, just off by a set amount of degrees, there is an adjustment you can make at the control panel.
