Kneading paddles dont snap into the spindles .
Hi,
The situation you speak of is common for ALL bread machines. You want the paddle to come off freely so it won't get stuck on the motor spindle. You can take the paddle out of the machine after the final kneading cycle and before final rise. This will prevent a big hole in the bread. If your machine does not have a pause cycle, take the pan out of the machine to remove the paddle to be safe. Hank

Hi, Take the pan out of the machine and see if you can turn the paddles by hand. If yes that's good...if no then paddles are sticking. Keep pan out of machine and start a kneading cycle. Look through the lid window and see if the motor shafts are turning. If no...then the belts fell off or are loose. If everything is fine then maybe it's the electronic panel. Hank

Your machine is too warm while the dough rises. No adjustment possible. You can add a bit of Gluten to your bread or buy flour for bread making instead of general purpose flour. Most white flour has gluten reduced during processing.
Julie Childs book, "the way to cook" has a nice write up on gluten in European flour vs. the general purpose flour we commonly buy in the US.

You can take the paddle out of the machine after the final kneading cycle and before the final rise cycle. Take the whole pan out of the machine to do this to be safe, or use a pause button if you have one. Hank
The machine does not rotate, I mean it does not

Take the bread pan and paddle out of the machine and see it you can spin the paddle freely by hand. If no, then the sealed bearing is frozen or broken. If yes keep the pan out of the machine and start a kneading cycle. Look through the lid window and see if the motor shaft is spinning. If no then the belt fell off or snapped, or the motor is broken. I solved the problem... I had to read the Black and Decker book again. But the machine is really to small for the 3 lb loaf. Many times I had to punch down the bread by hand so it would not stick to the top. And cutting down on the yeast is not the problem, as so many had said. Thank you, I am still not over happy with the BIG Machine.
Bread too high

No, I don't think you need to panic. You might encounter a little sticking to the window, but I'd go-ahead
and try it, and keep an eye on it. Worst possible scenario, you have
to clean out the machine. Anything more than that, and it's clearly a
defective unit.
As I read the manual, it doesn't warn about this being an issue. (You _did_ read your manual, didn't you?..........(;^])
From Item #5:
"5.Look but don't open:The glass in the cover is there to monitor the
process. Do not open the lid during the baking process...."
And from item #13:
"too high - try less yeast (1/4 tsp. at a time). "

There are many ways to adjust the weight of your bread. Try any (or all) of the following:
1) a little less salt.
2) a little more water
3) a little less flour
4) add 1 or 2 tablespoons of wheat glutten
5) use the dough setting and let bread rise in bread pans for a good long time (e.g. 1.5 or 2 hours)
6) 'better for bread' yeast - stored in the refrigerator

I had the same problem. I find the loaves to be a much better size if I just use program setting 8 - Dough then put the dough in 2 regular bread pans or on cookie sheets (bagetts), let them have a second rising and finish them in the convection oven at 350 F for 21 minutes.
Way to high of loaf
Sounds like you may need to use a smaller quantity of all of the ingredients, or exchange for a machine that makes a large loaf. Well done, most people seem to have problems getting the loaf to rise enough!

Since this is a 3 pound loaf and most others are 1 1/2 or 2 pounds, the recipes will need to be modified. I found that this machine has mostly negative reviews. Just doubling a 1 1/2 loaf recipe won't necessarily work, since it needs more time to rise. Try moist yeast, instead of dry yeast. It MIGHT help.
