I think you are having a problem with a high limit switch that has become faulty. If you are running this around 400 degrees F. These things fail over time and since you said its a blodgett deck oven I assume it has to be over 10 years old. If you need further help please comment me back.

I know on residental ovens the "prob" stands for meat probe and will im not a expert on commercial ovens i suspect it means similar and if the probe isnt insalled if it has one the jack it plugs into is shorthed
Error code F3 - what
F3 Error Code - Shorted or open oven temperature sensor (RTD)
Check sensor harness and harness connection between oven sensor and oven control. Replace oven temperature sensor (RTD) if wiring is ok.
The first thing I would do is remove the oven from the cabinet, remove
the back cover and check the wire harness from the the oven sensor to
the control board. Eliminate the old sensor connection to the wire
harness and reconnect it, using a high temperature porcelain wire nuts.

Fan motor seized cannot get fan off drive shaft
Honest opinion is to just buy a new fan. BUT there are a few options to reomve it.....
1. cut the shaft and try to drive it out. 80% chance of no damage.
2. go buy a puller and remove it with it. A ok puller from a auto parts store 20 bucks. rental 5 bucks. Damage 95% no damage.
3. all the time to chase parts and gas. 20 bucks.
Hopefully you can get it removed from the shaft from the fan. Best of luck.
