Hoshisaki makes ice to slow
not sure what "too slow" is to you. Hoshi machines are designed to make more ice per batch but less batches per day. It is not unusual for a batch to take 25-35 minutes for one batch. The 1600 makes a lot of ice per batch. Look for some obvious things. If air cooled condenser, be sure it is clean. Make sure the water to the machine is not Hot water. It is not unusual to get Hot water feedback in a restaurant environment. Check for a leaking water valve. A sticking float can also cause long freeze cycles. Where is the control panell located on a hoshizaki ice maker
open the front of the machine. in the upper right had corner is a metal box with 2 screws. undo the screws and the cover will slide forward. contol board is inside there. be very careful when putting the cover back and there are a lot of wires and are easy to get them caught. turn power off then put panel back as a safety.

Hoshizaki KM-1600S too much water supply
If water is standing in the bin the drain is clogged. If water is raining down into the bin, Machine may not be level or the drain on the ice machine maybe partially clogged. If machine freezes up water will rain into bin too. Water fills ice machine while in harvest and continues to fill until ice machine`s suction reaches 49 degrees and the defrost timer times out.(usually 1-3 minutes after suction line reaches 49 degrees)

E1
High temperature alert E1 code occurs if box temperature has exceeded 18DEG F above the set point for more than 2 hours. It will reset its self after temp drops

Water pressure regulator
need model and serial numbers. I am assuming it is water cooled.(?) let me know more and we can try to fix

Makes small cubes
this is usually due to the reservoir loosing water or the float is not set right. during the freeze cycle, look for the machine drain and see if any water is draining. start there and let me know if I can help any further.
