How new is it, installed today? It takes 24 hours to settle.Also, if it was laid down during delivery, it should be left standing upright for the refrigerant gas and oil to settle before turning the compressor on.
The frost builds up during the day and a timer starts a defrost cycle, once, sometimes twice a day. This normally happens during the night, so you wake up to a wet fridge. The melted water runs into the defrost drain which often have a small P-Trap at the rear. Yours is blocked. If the frost you see is completely blocking the evaporator fins, either the defrost timer or the defrost heater has failed.

Pull refrigerator away from wall and look on back of unit. If you have a water filter it will be on water line, usually installed before water control valves.

There are no wiring diagrams available and there is no service manual. There are however videos on replacing ice makers. You might be able to freeze at the plug.

The Door Open Light is merely registering that the temperature inside the cabinet is not as cold as it should be and assumes that you have left the door ajar. With the doors closed, it should go off once it reaches the target temperature. If it is like it after an hour, remove the wall plug for 5 minutes which should reset it.

Do you mean the refrigerator light bulb? There are actually 2 bulbs behind the cover. Most likely, you need to squeeze the bottom of the light cover up to get the tabs clear of the back wall slots. Then tilt the cover towards you while you lift the cover up. That will get it clear of the hooks on the wall of the fridge.
