The service person who "by-passed 2 thermostats" should be reported to your local energy provider as this is unsafe, may cause a fire and is against Australian laws. I suspect he may not even be properly licensed or qualified. I would strongly suggest turning the unit off at the main switch board until a properly qualified and licensed service tech can look at the unit. With regards to "Home handy-man" wiring (finding a service manual and doing your own repairs) I would strongly recommend against it. Australian Standards are written very specifically to protect the end user (you) of any electrical equipment in Australia. This includes cable sizes & ratings, thermostat settings, the whole ball of wax. Have a go yourself and you are taking not only your own life, but everyone who ever touches that unit into your own hands.

I would suspect that the problem is caused by the external cooling fan located under the outside cooker cabinet housing, which continues to operate as the oven is cooling down if it is built in, you will have to remove it from the oven housing to access the fan

AEG oven tripping rcd at random points?
An RCD tripping points to an earth leak because that is what they are designed to do.
Check the wiring and pay special attention to the insulation.

Aeg oven taking over 25 minutes just to heat
You can tell if the fan is working, you will hear and see it.
If the element was bad, it wouldn't get hot at all.
If the thermostat was faulty, it usually goes short circuit and makes the element glow in time because it won't regulate the heat.
There are a couple of possibilities left;
Wrong element, too low a wattage.
Bad connection to the element.
