I think you have a commercial machine, and it almost sounds like the door or attached sheet metal may be warped.
Recommend you have someone watch it and see if the latch is really secure, or is always just about to let go.
Also, see if an electric or electronic part has failed allowing the door to open prematurely.
If the latching mechanism is very touchy, and you want to try to do-it-yourself, perhaps a pry bar used gently could adjust the door to not let go at the wrong time.
