Sounds to me like the symbol represents a thermometer, which is for the main oven temperature.

Unfortunately, New World has not caught up with the 21st century. They do not have any manuals online as of now BUT you can email them and hopefully they can get one to you.

From the New World Web site: "How do I set my timer/programmer into manual when it is set in auto? (5 & 6 button versions) On your timer there are two buttons, which read "cook time" and "ready time". If your timer is in automatic, you can return it to manual by pressing these two buttons simultaneously. REMEMBER - if your oven is in automatic it will not work until the time you set it to come on or if you return it to manual."
