Is my Technics SA-AX720 a Doby Digital 5.1 or greater
It is not Dolby Digital at all. It's just a Dolby Pro Logic.
That means you have two front a centre channel for speech and back surround which is split between between two speakers.
The difference is that the two back speakers on yours will produce the same sound from both. Whereas a Dolby 5.1 will produce individual sounds on the rear speakers and better definition on the other speakers.
If you want better quality sound you need to upgrade it. I would go for one that has more channels than 5.1 and if you have a blu-ray player consider a Dolby Atmos one.
I have an SA-300 receiver.
A little more triage would be in order before you take a knife to it. Starting with - What Brand is the SA-300?
What source(s) produce the sound? Have you referred to the manual(s)?
If it's only an analog source doing it I would suspect a bad audio cable or a switch contact somewhere in the signal path. Typically, it might be a switch you rarely use, like a Tape Monitor or Mute. It's wise to occasionally (with power OFF) manipulate all manual controls throughput their ranges a number of times to wipe oxides from their contacts.
